Simple barbecued chicken

    A very simple marinade recipe seasons and flavours chicken breasts perfectly before you barbecue them.

    Serves: 4 

    • 2 large boneless chicken breasts, each cut into two halves
    • 4 teaspoons olive oil
    • 1 teaspoon dried oregano
    • 4 cloves of garlic, minced
    • 1 scant teaspoon salt, or to taste
    • 1/8 teaspoon cayenne pepper
    • 2 teaspoons soy sauce
    • black pepper, to taste
    • fresh parsley, to taste

    1. In a bowl, whisk olive oil with oregano, garlic, salt, cayenne pepper, soy sauce and black pepper. Add chicken breasts, mix and marinate in the fridge for one hour.
    2. Preheat the barbecue on high heat and lightly oil the grilling grate. Cook the chicken until it is no longer pink in the centre, about 4 minutes on each side. Serve garnished with parsley.
