These spaghetti with a creamy tomato sauce and smoked salmon is one of our favourite family recipes.

Ingredients
Serves: 4
400g spaghetti
3 shallots, minced
1 tablespoon butter
1 tablespoon oil
1 (23g) sachet Italian herbs
1 (400g) tin chopped tomatoes
300g smoked salmon, chopped
250ml dry white wine
125ml medium cherry
salt
freshly ground white pepper
1 tablespoon minced fresh basil
400ml single cream
3 tablespoons freshly grated Parmesan cheese

Bring a large pot of water to the boil with 1 teaspoon salt and a dash of oil. Cook spaghetti till al dente.
Heat butter with a little oil in a saucepan and fry shallots till translucent.
Add the tomatoes and half of their juice to the shallots, then the Italian herbs. Season with salt and pepper. Cover and bring to the boil, then reduce heat and simmer for 10 minutes.
Puree the sauce and add cream. Bring to the boil again and add white wine, salmon and fresh basil. Reheat thoroughly but co not let it boil again.
Serve spaghetti topped with sauce and grated Parmesan cheese.
