Fish shaped salmon in puff pastry

    This salmon fillet in puff pastry will amaze your dinner guests but it's actually not difficult to prepare.

    Serves: 4 

    • 1 onion, minced
    • 1 tablespoon olive oil
    • 400g salmon fillet without skin, diced
    • 6 dill springs, minced
    • 3 tablespoons thick creme fraiche
    • salt and pepper
    • 1 (375g) ready rolled puff pastry
    • 1 egg, lightly beaten

    1. Preheat your oven to 180 C / Gas 4.
    2. In a frying heat oil and fry onion till translucent. In a bowl mix salmon, onion, dill and creme fraiche. Salt and pepper.
    3. Place the puff pastry on your work surface and spread the salmon mixture in the middle in the shape of a rectangle, leaving a wide edge all around. Cut the edges int 1.5cm strips.
    4. Fold them over the centre in an alternating fashion and pinch the seams together with your fingertips to seal.
    5. Shape one end like a fish head.
    6. Shape and cut the other end like a fin.
    7. Brush all over with egg and bake in the preheated oven till golden brown, about 30 minutes.
