Quick French onion soup

    This is a great French onion soup recipe to make when you don't feel like spending hours in the kitchen. It tastes just as delicious!

    Serves: 4 

    • 2 onions, thinly sliced
    • 2 tablespoons butter
    • 1/2 teaspoon thyme
    • 125ml dry white wine
    • 1L beef stock
    • salt and pepper, to taste
    • 4 slices white bread
    • 300g Gruyere cheese, coarsely grated

    1. Melt the butter in a large saucepan over medium heat. Add the onions and saute, stirring, until they begin to soften, about 5 minutes.
    2. Reduce heat and add thyme; continue to stir until onions begin to caramelise, about 10 minutes.
    3. Pour in the white wine and saute until wine has evaporated. Add stock and simmer for 5 to 10 minutes; season to taste with salt and pepper.
    4. Meanwhile, preheat oven to 220 C / Gas 7. Place the bread slices on a baking tray and top with grated Gruyere cheese.
    5. Toast the bread slices in the oven until cheese has melted and golden brown on top. Serve the soup with a bread slice on top of each bowl.
