Parsley anchoïade

    Anchoïade is a French anchovy dip. Not everyone fancies a strong anchovy flavour therefore I am adding lots of parsley to mine. Spread on fresh baguette and briefly grilled in the oven, it makes a quick and tasty party nibble.

    Serves: 12 

    • 1 (50g) tin anchovy fillets in oil
    • 100g butter, softened
    • 1/2 teaspoon salt
    • 1 small bunch fresh parsley
    • 3 garlic cloves, minced
    • 1 to 2 French baguettes, sliced

    1. Preheat your oven grill.
    2. Add all the ingredients including the anchovy oil in the food processor and chop till smooth.
    3. Spread the baguette slices with the mixture, place on a baking tray and slide under the oven grill for 3 minutes.
