Marzipan macaroons

    If you like marzipan, and/or you have some egg yolks left over, this is a great easy recipe for gluten free macaroons.

    • 250g marzipan
    • 50g butter
    • 30g icing sugar
    • 1 lemon, zested
    • 3 egg yolks

    1. Preheat your oven to 170 C / Gas 3-4. Line a baking tray with greaseproof paper.
    2. Using the kneading attachment of your mixer knead half of the marzipan with butter and icing sugar till smooth.
    3. Add the rest of the marzipan, lemon zest and egg yolks and knead till well combined. Fill into a pastry bag with a large nozzle.
    4. Squirt macaroons on the prepared baking tray, leaving ample distance between them. Bake in the preheated oven for 15 minutes.
