Fast apple rhubarb pie

About this recipe: Simple, but sooo delicious! Serve warm with a scoop of vanilla ice cream or custard.

Serves: 8 

  • 1 (23cm) pastry case, baked
  • 6 apples - peeled, cored, and chopped
  • 3 sticks rhubarb, diced
  • 200g (7 oz) caster sugar
  • 2 teaspoons ground cinnamon

  1. Preheat oven to 220 C (gas 7).
  2. Combine apples and rhubarb in a large bowl. Mix together sugar and cinnamon in a small bowl, then sprinkle over fruit. Toss until fruit is thoroughly coated. Spoon mixture into pastry case.
  3. Bake in preheated oven for 40 minutes.
