This is a very quick recipe for Spanish tapas. Mushrooms are fried in hot oil and seasoned with parsley and garlic. They should be served right away because they taste best while still hot.

2 tablespoons olive oil
500g fresh closed cap chestnut mushrooms, halved or quartered if large
salt and pepper
1 garlic clove, minced
1 to 2 tablespoons minced parsley

Heat olive oil in a frying pan till very hot. Add mudrooms, salt and pepper and fry over high high whilst stirring constantly, about 3 to 4 minutes.
Add parsley and garlic and fry for 1 further minute. Make sure not to fry the mushrooms for too long, they should not release their liquid. Serve at once.
