Chilled cucumber soup

    This is a variation of gazpacho that uses cucumbers instead of tomatoes. If you have organic unsprayed cucumbers, you can leave them unpeeled for a brighter colour.

    Serves: 4 

    • 2 medium cucumbers, peeled, seeded and diced
    • 2 cloves garlic
    • 1 pinch cayenne pepper
    • 2 to 3 tablespoons lemon juice
    • 1 teaspoon demerara cane sugar
    • 1 small handful mint leaves
    • salt and pepper to taste
    • 100g feta cheese, crumbled

    1. In a blender, combine cucumbers, garlic, cayenne, lemon juice, sugar and mint. Pulse to a puree. If necessary add water until soup is desired consistency.
    2. Season with salt and pepper and chill for 1 hour in the fridge. When serving, sprinkle with crumbled feta.
