Gluten free chocolate almond cake

    This is a rich moist chocolate cake, almost like a brownie. If the mixture is too liquid, add a little gluten free flour.

    Makes: 1 cake

    • 200g dark chocolate
    • 200g butter
    • 200g caster sugar
    • 200g ground almonds
    • 2 teaspoons baking powder
    • 2 teaspoons vanilla sugar
    • 1 pinch salt
    • 4 eggs
    • 2 to 3 tablespoons gluten free flour or ground almonds as needed
    • icing sugar

    1. Preheat oven to 160 C / Gas 3. Line a springform tin with greaseproof paper.
    2. Break chocolate into pieces and melt together with the butter in a hot water bath. Let cool slightly.
    3. Add sugar, almonds, baking powder, vanilla sugar and salt. Stir till smooth then add the eggs and stir again till smooth.
    4. If the mixture seems very liquid, add 2 to 3 tablespoons flour or ground almonds and tip mixture into the prepared tin.
    5. Bake in the preheated oven for 40 minutes. Let cool, The cake should be slightly moist inside.
    6. Dust with icing sugar.
