Strawberry brownie trifle

    If you have brownies leftover from a traybake, you can use them to make this quick and easy trifle. It requires no cooking and is also suitable for children as it does not contain any alcohol.

    Ingredients
    Serves: 4 

    • 200ml whipping cream
    • 2 teaspoons vanilla sugar
    • 3 large brownies
    • 100g mascarpone cheese
    • 100g Greek yoghurt
    • 50g icing sugar
    • 3 tablespoons lemon juice
    • 200g strawberries

    Method

    1. Whip the cream with vanilla sugar till stiff. Chop the brownies and set to one side.
    2. In a bowl, mix mascarpone cheese, yoghurt, icing sugar and 2 tablespoons lemon juice. Rinse and hull the strawberries. Cut the strawberries into small dice and mix with the remaining lemon juice and sweeten with sugar to taste.
    3. Place a layer of the mascarpone mix in each glass or tumbler followed by a layer of brownies.
    4. Add 1 to 2 tablespoons of strawberries and repeat the layers, ending with strawberries as the last layer. Garnish with whipped cream and decorate with sugar sprinkles and crumbled brownies. Chill till serving.
