If you have brownies leftover from a traybake, you can use them to make this quick and easy trifle. It requires no cooking and is also suitable for children as it does not contain any alcohol.

200ml whipping cream
2 teaspoons vanilla sugar
3 large brownies
100g mascarpone cheese
100g Greek yoghurt
50g icing sugar
3 tablespoons lemon juice

Whip the cream with vanilla sugar till stiff. Chop the brownies and set to one side.
In a bowl, mix mascarpone cheese, yoghurt, icing sugar and 2 tablespoons lemon juice. Rinse and hull the strawberries. Cut the strawberries into small dice and mix with the remaining lemon juice and sweeten with sugar to taste.
Place a layer of the mascarpone mix in each glass or tumbler followed by a layer of brownies.
Add 1 to 2 tablespoons of strawberries and repeat the layers, ending with strawberries as the last layer. Garnish with whipped cream and decorate with sugar sprinkles and crumbled brownies. Chill till serving.
