Vegan gooseberry crumble

    I usually make crumble topping with butter but I wanted to accommodate vegan guests so I tried my favourite crumble topping with vegan butter and it vanished almost as quickly as the non-vegan crumble.

    • 500g gooseberries, topped and tailed
    • 80g golden caster sugar
    • 100g plain flour
    • 120g light brown soft sugar
    • 1 pinch salt
    • 60g chopped almonds
    • 1/4 teaspoon ground ginger
    • 85g vegan butter/margarine

    1. Preheat your oven to 190 C / Gas 4.
    2. In a baking dish combine gooseberries with golden caster sugar.
    3. In a bowl rub flour with brown sugar and salt between your fingertips till it resembles sand. Add almonds and ginger then cut in the butter and mix till crumbly.
    4. Distribute crumble mix over the gooseberries and bake till lightly browned and bubbly, about 45 to 55 minutes. Serve warm.
