Mexican street tacos

    Cooked chicken, guacamole, onions and fresh coriander served in tortillas and topped with fresh lime juice. Use leftover steak or roast pork if you prefer.

    • 6 small tortilla wraps
    • 425g chopped cooked chicken
    • 4 sprigs fresh coriander, chopped
    • 75g chopped onion
    • 225g guacamole
    • 1 lime, cut into wedges

    1. Place a piece of kitchen roll on a microwave-safe plate and top with tortillas; heat in the microwave for 10 seconds.
    2. Place chicken in a microwave-safe bowl; heat in the microwave until heated through, 30 seconds to 1 minute.
    3. Layer chicken, fresh coriander, onion and guacamole, in that order, onto each tortilla. Squeeze lime juice over each taco.
