A moist chocolate loaf cake is enhanced with chocolate chips to make a much richer chocolate cake.

Makes: 1 loaf cake
200g caster sugar
200g butter, softened
1/2 teaspoon of vanilla extract
200g self-raising flour
40g cocoa powder
40g caster sugar
75ml warm milk
100g dark chocolate, chopped into small pieces or chocolate chips

Preheat the oven to 160 C / Gas 3. Grease a loaf tin and dust with flour.
Beat the sugar and softened butter with a mixer until smooth. Add vanilla and eggs, one by one, mixing well. Add the flour in gradually, mixing on the highest setting for about 3 minutes until smooth. Mix cocoa powder, 40g caster sugar and warm milk together until smooth; add to cake mixture and mix well. Fold in chopped chocolate and pour mixture into prepared loaf tin.
Bake the cake in the middle of the preheated oven for about 60 minutes, or until a skewer inserted into the middle of the loaf cake comes out clean.
Allow to cool for 10 minutes in the tin, then transfer the cake to a wire rack to cool completely.
