Meatballs are seasoned with cumin and ground coriander, coated in breadcrumbs and cooked in a tomato sauce. A delicious summertime dish when served with a cucumber and spring onion couscous salad.

Meatballs and tomato sauce
300g beef mince
4 cloves of garlic, crushed and divided
1 teaspoon ground cumin
1 1/2 teaspoons of ground coriander
salt and pepper to taste
50g breadcrumbs, divided
2 tablespoons olive oil, divided
1 (400g) tin chopped tomatoes
1 small cucumber, diced
4 spring onions, finely sliced
bunch fresh parsley, finely chopped
cumin, for seasoninig
olive oil, for drizzling

Mix the mince with half of the garlic, egg, cumin, coriander, half of the breadcrumbs, salt and pepper. Form small balls and roll them in the remaining breadcrumbs.
Heat 1 tablespoon olive oil in a saucepan over medium heat; add remaining crushed garlic and cook until golden, about 1 minute. Add chopped tomatoes and simmer for 10 minutes, or until it has thickened slightly. Puree the tomatoes with an immersion blender to make a smooth sauce.
Heat remaining 1 tablespoons olive oil in a large frying pan; arrange meatballs in the pan in an even layer and brown on one side before turning them over. Add tomato sauce and simmer meatballs for about 15 minutes, or until meatballs are cooked through.
Prepare the couscous according to the instructions on the packet. Add diced cucumber, spring onion and freshly chopped parsley; season to taste with ground cumin and drizzle olive oil on top.
Serve the couscous salad lukewarm or cold with hot meatballs and tomato sauce.
