Tuna salad recipes often call for dried fruit like sultanas or tinned fruit like pineapple so I thought I'd see how it turns out with a fresh apricot to it. I am very happy with the result, here is the recipe:
1 tablespoon minced fresh coriander, to taste (optional)

Toast the pecans in a non greased pan till fragrant. Let cool, then chop.
In a bowl add tuna, mayonnaise, apricot, lemon juice, curry powder, pepper and coriander if using. Stir well to combine. Adjust the seasoning (I don't add extra salt because I find the store bought mayo is already salty enough).
