Curried tuna apricot salad

    Tuna salad recipes often call for dried fruit like sultanas or tinned fruit like pineapple so I thought I'd see how it turns out with a fresh apricot to it. I am very happy with the result, here is the recipe:

    Serves: 4 

    • 12 pecan halves
    • 1 (160g) tin tuna in water, drained
    • 4 tablespoons light mayonnaise
    • 1 fresh ripe apricot, stone removed and minced
    • 1 dash lemon juice, to taste
    • 1/2 teaspoon medium hot curry powder, to taste
    • freshly ground black pepper, to taste
    • 1 tablespoon minced fresh coriander, to taste (optional)

    1. Toast the pecans in a non greased pan till fragrant. Let cool, then chop.
    2. In a bowl add tuna, mayonnaise, apricot, lemon juice, curry powder, pepper and coriander if using. Stir well to combine. Adjust the seasoning (I don't add extra salt because I find the store bought mayo is already salty enough).
    3. Serve or refrigerate till serving.
