Vegan fried courgette bites

    This super simple starter for a summer dinner is especially appealing with yellow courgette if you can find them. The courgette should not be too big and mature because those have large seeds, you need medium courgettes for this recipe.

    • 3 medium yellow courgettes
    • olive oil for frying
    • herb salt, to taste
    • freshly ground black pepper, to taste
    • toothpicks

    1. Wash courgettes and cut off the ends. Cut courgette lengthwise into slices about 2 mm thick, a vegetable slicer/mandolin is best for that job.
    2. Heat enough oil in a large frying pan so the entire bottom is covered. Add as many courgette slices as you can fit in a single layer but do not overcrowd the pan.
    3. Fry the slices till browned on one side, then turn over and fry the other side. Place on kitchen towel to absorb any excess oil. Season with herb salt and pepper. Roll the slices up while still warm and secure each with a toothpick.
    4. Repeat with the remaining slices. Serve at room temperature or chilled.


    If you don't have herb salt, use regular salt and sprinkle slices with fresh minced herbs. Basil goes very well with courgette.
