Cinnamon and walnut muffins

    These moist cinnamon muffins with chopped walnuts are perfect with a cup of tea, or for packing into lunch boxes.

    Makes: 12 muffins

    • 150g softened butter
    • 150g caster sugar
    • 1 teaspoon ground cinnamon
    • 2 teaspoons baking powder
    • 3 eggs
    • 3 tablespoons single cream
    • 300g plain flour
    • 100g chopped walnuts

    1. Preheat the oven to 160 C / Gas 3. Grease a muffin tin or line with paper cases.
    2. Beat butter, caster sugar, cinnamon and baking powder together in a large bowl; mix in eggs, one at a time. Add cream and flour; mix until well combined. Fold in chopped walnuts.
    3. Divide the mixture evenly into the muffin tin or paper cases, about half full.
    4. Bake the muffins in the preheated oven for 1 hour, or until a skewer inserted into the centre of a muffin comes out clean.
