A recipe for plain vanilla cupcakes that you can add food colouring or decorate any way you want depending on the occasion.

Makes: 12 cupcakes
200g caster sugar
200g butter, softened
2 or 3 drops vanilla extract
200g self-raising flour
pinch of salt
2 to 3 tablespoons milk

Preheat the oven to 180 C / Gas 4. Line a cupcake tin with paper cases.
Beat the sugar and softened butter together in a bowl with an electric mixer until smooth. Add eggs, one at a time, beating well after each one. Stir in vanilla and gradually beat in flour. Add a pinch of salt and the milk; beat on the highest setting for about 2 or 3 minutes until mixture is pale yellow and smooth. Spoon the cupcake mixture into paper cases, filling them about half full.
Bake the cupcakes in the middle of the preheated oven for about 30 minutes, or until a skewer inserted into the middle of a cupcake comes out clean. Allow to cool for 5 minutes in the tin, then transfer the cupcakes to a cooling rack.
