A creamy smoked salmon, tomato and spring onion pasta dish that both adults and children are crazy about!

400g tagliatelle pasta
5 ripe tomatoes
1 bunch of spring onions, thinly sliced
1 tablespoon of olive oil
250ml of crème fraîche
200g smoked salmon, sliced
freshly chopped parsley
freshly ground black pepper

Cook pasta in a large pot of boiling salted water according to directions on the packet; drain.
Score an 'X' on the bottom of each tomato; place in a bowl and pour boiling water over them. Leave for one minute, then plunge them into a bowl of cold water. Lift tomatoes out of cold water and peel off the skin with a knife or your fingers; chop tomatoes into pieces.
Heat olive oil in a pan over medium heat; add spring onions and cook for 1 minute. Stir in the crème fraîche, chopped tomatoes and smoked salmon. Simmer for 5 minutes to allow the sauce to thicken slightly.
Divide tagliatelle on 4 plates and top with creamy salmon sauce; garnish with freshly chopped parsley and season with black pepper.
