Easy minestrone soup

    This is my version of minestrone soup that I make with lots of finely chopped fresh vegetables and the kids gobble it up! Add pasta for a more filling dish.

    Serves: 6 

    • 2 tablespoons olive oil
    • 4 stalks celery, diced
    • 3 medium carrots, diced
    • 1 small red onion, diced
    • 2 green courgettes, diced
    • 1 yellow courgette, diced
    • 1 clove garlic, crushed
    • 1L vegetable stock
    • 1 (400g) tin canellini beans, drained
    • 1 (400g) tin chopped tomatoes
    • handful fresh basil, finely chopped
    • salt and pepper, to taste

    1. Heat oil in a large saucepan over medium heat. Add celery, carrot and red onion; cook, stirring occasionally, for 5 minutes to soften the vegetables.
    2. Add diced courgettes; stir in crushed garlic. Add stock, beans and chopped tomatoes. Simmer for 30 minutes, partially covered.
    3. Stir in chopped basil and season to taste with salt and pepper.
