This is my go-to recipe for sponge cake. Bake in a bundt tin to give a gorgeous presentation or bake in two round cake tins and sandwich with whipped cream and strawberry coulis.

Makes: 1 cake
200g plain flour
1 teaspoon baking powder
pinch of salt
200g softened butter
200g caster sugar
4 eggs, room temperature
1 teaspoon vanilla extract

Preheat oven to 170 C / Gas 3. Lightly grease and flour a bundt cake tin or two 20cm round cake tins.
Sift flour and baking powder into a large bowl, holding the sieve high to add plenty of air; add pinch of salt. Beat in soft butter, sugar, eggs and vanilla with an electric mixer until combined.
Transfer into prepared tin and bake in preheated oven for about 35 to 40 minutes, checking only after 35 minutes to see if a skewer inserted into the centre comes out clean.
Cool cake for 10 minutes in the tin; transfer to a cooling rack and allow cake to completely cool.
