Cucamelon pickles

    Cucamelons are adorable tiny melons that taste like cucumbers. Eaten on their own they are a bit dull but they make very tasty pickles.

    Makes: 1 large jar

    • 350g cucamelons
    • 2 sprigs fresh dill
    • 2 to 4 small green chillies
    • 2 teaspoons crushed black peppercorns
    • 1 tablespoon yellow mustard seeds
    • 1 tablespoon dill seed
    • 175ml water, more as needed
    • 175ml apple cider vinegar, more as needed
    • 1 tablespoon coarse salt

    1. Wash cucamelons, dill and chillies. Cut chillies in half and remove seeds. Place cucamelons, chillies and all the spices in a sterilised jar.
    2. In a saucepan bring water, vinegar and salt to the boil till the salt has dissolved. Let cool.
    3. Pour over the cucamelons to cover completely. If here is not enough liquid, mix equal parts of water and vinegar and add to the jar.
    4. Close jar with a lid and let stand for at least 3 to 4 days. The cucamelons start to develop good flavour after about 1 week. They keep for 1 month in the fridge.
