Peach cucamelon salsa

    The tiny cucamelons are fantastic in salsa. I don't make the salsa spicy but you can up the heat by adding a jalapeno chilli. Marinating the onion in lime juice gets rid of the strong raw onion takes, which I dislike.

    Serves: 4 

    • 1/2 medium red onion, minced
    • 3 tablespoons lime juice
    • 4 sprigs fresh coriander, minced
    • 2 large ripe peaches
    • 70g cucamelons
    • 1 pinch salt
    • 1/4 teaspoon chilli powder
    • 1 green chilli, seeds removed and minced (optional)

    1. Mix the onion with the lime juice in a small bowl and let marinate for 15 minutes.
    2. If the peaches are very very ripe, you can easily remove the skin but you can also leave it on if it does not bother you. Cut the peaches in half, remove stone and dice the peaches. Cut the cucamelons into thin slices.
    3. Add the peaches, melons, onion, lime juice, salt, chilli powder and fresh chilli if used. Stir well to combine. Refrigerate till serving.
