Courgette salmon quiche

    Smoked salmon is a great addition to vegetable quiche like this courgette quiche with a puff pastry base. Remember to remove your puff pastry from the fridge 10 to 15 minutes before use.

    Serves: 6 

    • 3 medium courgettes
    • a little olive oil
    • salt
    • 1 (375g) ready rolled puff pastry
    • 4 to 5 slices smoked salmon, cut into strips
    • 3 eggs
    • 2 tablespoons creme fraiche
    • 100ml milk
    • 10 to 15 fresh basil leaves, minced
    • salt and pepper
    • 20g grated Gruyere cheese

    1. Preheat your oven to 180 C / Gas 4.
    2. Wash and peel courgettes, and slice thinly. Heat a little olive oil and fry courgette till coloured, adding a bit of salt.
    3. Line a tart pan with the puff pastry. Cover with courgette and salmon, alternating the two.
    4. In a bowl whisk eggs, crème fraîche and milk. Stir in basil and add salt and pepper.
    5. Pour over the quiche filling and sprinkle with Gruyere cheese. Bake in the preheated oven till golden brown, about 30 minutes.
