This is a plum butter with much less sugar than other recipes. First the plums are slowly cooked down in the oven which intensifies their flavour, then the sugar is only added towards the end when you finish it on the hob.

3.5kg ripe plums, pitted
350g caster sugar
1 teaspoon mixed spice

Preheat your oven to 175 C / Gas 3-4.
Place the plum halves in a single layer on a large baking tray with tall sides (this is necessary so that the juice does not spill into your oven). Leave in the oven until the plums have cooked down to about 1/3. Turn them over every so often. Depending on how juicy the plums are this, can take 3 to 4 hours.
Transfer plums and all the accumulated juice to a large saucepan. Add sugar and cook till thickened. Stir in mixed spice.
Fill into sterilised jars and close with lids. Let jars cool upside down and let rest 24 hours before storing.
