Leek and courgette quiche

    This quiche with chicken, leek, courgette and a puff pastry based is filling enough to be a main course.

    Serves: 4 

    • 1 (375g) ready rolled puff pastry
    • 2 chicken fillets, cubed
    • 3 leeks, sliced and thoroughly washed
    • 1 courgette, sliced
    • 1 tablespoon oil
    • salt and pepper
    • 2 teaspoons hot curry powder, to taste
    • a few springs fresh coriander, minced
    • 250g 0% natural yoghurt
    • 3 eggs
    • grated cheese, to taste

    1. Preheat oven to 200 C / Gas 6. Line a springform tin bottom and sides with the puff pastry.
    2. In a frying pan, fry the chicken fillets in the hot oil. Add leek and courgette slices. Season with salt, pepper and curry. Fry for 5 minutes, then add coriander. If there is additional liquid in the pan, pour it off. Spread over the puff pastry.
    3. Beat eggs with yogurt; pour over the vegetables and sprinkle grated cheese on top.
    4. Bake in the preheated oven for 40 minutes.
