Chocolate and peanut butter sponge pudding

    No one will believe that you made this delectable chocolate peanut butter pudding in your slow cooker.

    • 200g plain flour
    • 75g soft brown sugar
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 250g smooth peanut butter
    • 175g soured cream
    • 3 tablespoons butter, melted
    • 1 teaspoon almond extract
    • 2 tablespoons boiling water
    • 150g caster sugar
    • 30g cocoa powder
    • 500ml boiling water
    • 2 tablespoons chocolate syrup

    1. Grease the inside of a slow cooker with cooking spray.
    2. Whisk flour, brown sugar, baking powder and bicarbonate of soda together in a bowl. Whisk peanut butter, soured cream, melted butter, almond extract and 2 tablespoons boiling water in a separate bowl until smooth. Stir flour mixture into peanut butter mixture to make a very thick mixture. Transfer mixture into prepared slow cooker.
    3. Whisk white sugar, cocoa powder and 2 boiling water in a bowl until thoroughly combined. Pour chocolate mixture over pudding in slow cooker.
    4. Cook on High until pudding begins to pull away from the sides of the cooker and feels firm on top, about 1 1/2 hours. Allow to cool 15 minutes before serving. Drizzle with chocolate syrup.
