Banana cupcakes with caramel cream

    Chunky slices of banana are cooked inside cupcakes to make these mini cakes that are delicious served warm with a caramel flavoured cream.

    Serves: 14 

    • Cupcakes
    • 300g self-raising flour
    • 200g soft brown sugar
    • 1 teaspoon cinnamon
    • 1/2 teaspoon salt
    • 2 eggs
    • 1 teaspoon vanilla
    • 180ml milk
    • 80ml light vegetabe oil
    • 4 large bananas
    • Caramel cream
    • 300ml whipping cream, whipped
    • 1 (397g) tin caramel

      Banana cupcakes:

    1. Preheat oven to 180 C / Gas 4. Line a 12 hole cupcake tin with paper cases.
    2. Place flour, brown sugar, cinnamon, salt, eggs, vanilla, milk and oil into a medium bowl; beat until well combined using an electric mixer.
    3. Slice each banana into 4 pieces. Note: Each piece should be able to fit into a cupcake case.
    4. Place about 1 tablespoon of cupcake mix into each paper case and place a piece of banana (widthways) on top of mixture. Cover with another tablespoon of cupcake mix.
    5. Cook cupcakes in preheated oven for 20 to 25 minutes until golden brown on top and spring back when you touch it.
    6. Caramel cream:

    7. Using an electric mixer, beat the cream and caramel until well combined and slightly thick. Don't over beat or it will separate.
    8. Spoon the cream on top of warm cupcakes.
