Peach and blueberry cobbler

    This simple dessert cobbler uses tinned peaches and frozen blueberries covered by the easiest crumble topping, so you can have a taste of summer all year.

    Serves: 6 

    • 1kg tinned sliced peaches with juice
    • 150g frozen blueberries
    • 100g plain flour
    • 100g caster sugar
    • 1 teaspoon baking powder
    • 120g butter

    1. Preheat oven to 200 C / Gas 6. Grease a 23cm glass baking dish.
    2. Pour peaches into the prepared dish; sprinkle the blueberries on top of the peaches. In a bowl, whisk the flour, sugar and baking powder until thoroughly combined. Rub the butter into the flour mixture to make a crumble consistency; spread the crumble mixture over the fruit.
    3. Bake in the preheated oven until the fruit is bubbling and the topping is golden brown, 45 minutes to 1 hour. Allow to cool; filling will thicken as it cools.

    I enjoyed this desert. I added cinnamon and brown sugar. And there was a large amount of juicier from the peaches so I added 2 tablespoons of cornstarch to help thicken while baking  -  17 Jan 2012  (Review from Allrecipes US | Canada)


    This recipe was very good and very easy to make. the recipe didn't thicken like the recipe said which turned out OK since we served it with vanilla ice cream and everyone wanted some of the juice on the ice cream.  -  24 Oct 2011  (Review from Allrecipes US | Canada)
