Pears are poached in sweet white wine with star anise and fresh ginger. Serve the pears with some of the syrup for a light dessert.

Ingredients

8 firm, ripe pears
1 (350ml) bottle sweet white wine
200g caster sugar
8 star anise
1 or 2 strips peeled fresh ginger
water, as needed

Peel the pears, but leave them whole, with the stalk still attached. Place them upright in a large saucepan; pour in wine, sugar and add star anise and ginger. Add enough cold water to just cover the pears. Bring to the boil and simmer for 50 minutes.
Remove the pears from the saucepan and let them cool down. Bring the liquid in the saucepan back up to the boil and simmer until it has reduced in volume and looks like a syrup, about one hour.
Serve each pear on a plate or in a glass, with one star anise and some of the syrup poured over it.
