Pumpkin nut financiers

    You need a set of 12 silicone financier moulds to bake these light and moderately sweet autumnal treats.

    Makes: 12 financiers

    • 30g butter
    • 45g plain flour
    • 40g icing sugar
    • 3 egg whites
    • 100g pumpkin puree
    • 1 tablespoon liquid honey
    • 70g ground nuts

    1. Preheat oven to 200 C / Gas 6. Place financier silicone moulds on a baking tray, or grease metal financier mould.
    2. Melt butter in a bowl in the microwave for 40 seconds. Beat till creamy.
    3. In another bowl add flour, icing sugar, and nut mixture.
    4. Add egg whites, pumpkin puree and honey. Beat vigorously till well combined. Add pumpkin, butter and nuts and beat till well combined.
    5. Fill mould with the mixture.
    6. Bake in the preheated oven till lightly golden, 10 to 12 minutes. Let cool completely before unmoulding.
