Kokosmakronen (German coconut macaroons)

    These easy coconut macaroons require only 4 ingredients. The trick is to bake them just long enough so they are lightly coloured on the outside but still moist one the inside.

    Serves: 45 

    • 200g caster sugar
    • 200g desiccated coconut
    • 2 teaspoons vanilla sugar
    • 3 large egg whites

    1. Preheat your oven to 150 C / Gas 2. Line 2 baking trays with greaseproof paper.
    2. Beat egg whites with an electric mixer till very stiff whilst gradually adding sugar and vanilla sugar. Fold in coconut.
    3. Using 2 teaspoons, place small macaroons on the prepared baking trays.
    4. Bake till the macaroons are lightly coloured on the outside, about 15 to 20 minutes depending on size. Do not bake them for too long, otherwise they will dry out.
    5. Let cool slightly, then transfer to a a wire rack and let cool completely.
