Roasted red and white cabbage

    This is an unusual way to prepare red and white cabbage. It gets wonderfully crispy and a special flavour when roasted in the oven. I serve it with a fruity vinaigrette.

    Ingredients
    Serves: 4 

    • 1/2 red cabbage, core removed and sliced thickly
    • 1/2 white cabbage, core removed and sliced thickly
    • olive oil
    • salt and pepper

    Method

    1. Preheat your oven to 195 C / 175 C fan / Gas 5-6. Lightly grease a baking tray.
    2. Place cabbage slices on baking tray in a single layer. Drizzle generously with olive oil and season with salt and pepper.
    3. Roast for 20 to 30 minutes till browned, turning the slices over after half of the time.
