This is an unusual way to prepare red and white cabbage. It gets wonderfully crispy and a special flavour when roasted in the oven. I serve it with a fruity vinaigrette.

1/2 red cabbage, core removed and sliced thickly
1/2 white cabbage, core removed and sliced thickly
olive oil
salt and pepper
Method Prep:10min › Cook:15min › Ready in:25min
Preheat your oven to 195 C / 175 C fan / Gas 5-6. Lightly grease a baking tray.
Place cabbage slices on baking tray in a single layer. Drizzle generously with olive oil and season with salt and pepper.
Roast for 20 to 30 minutes till browned, turning the slices over after half of the time.
