Korean beef and brown rice bowl

    This Korean beef bowl is seasoned with spring onions, ginger, soy sauce and sesame seeds. Serve over brown rice for a quick and easy dinner.

    Ingredients
    Serves: 4 

    • 450g lean beef mince
    • 5 cloves garlic, crushed
    • 1 tablespoon freshly grated ginger
    • 2 teaspoons toasted sesame oil
    • 120ml reduced salt soy sauce
    • 75g light brown sugar
    • 1/4 teaspoon cayenne pepper
    • 6 spring onions, chopped, divided
    • 775g hot cooked brown rice
    • 1 tablespoon toasted sesame seeds

    Method

    1. Heat a large pan over medium high heat. Add beef mince and cook, stirring until browned, 5 to 7 minutes.
    2. Add garlic, ginger and sesame oil, stirring until fragrant, about 2 minutes. Stir in soy sauce, brown sugar and cayenne pepper. Cook until some of the sauce absorbs into the mince, about 7 minutes. Add 1/2 of the chopped spring onions.
    3. Serve mince over hot cooked rice; garnished with sesame seeds and remaining chopped spring onions.
