Cauliflower potato bake

This is an easy recipe but make sure to season every layer well otherwise it turns out bland.

Serves: 4
- 1 large head cauliflower
- 750g potatoes
- 1 knob butter
- 2 eggs
- 200ml double cream
- dried crumbled oregano
- ground nutmeg
- salt and pepper
- 100g grated cheese

- Peel potatoes, cut into thick slides and boil in a pot of salted water till soft but not falling apart, about 15 minutes.
- In the meantime break up the cauliflower into florets and boil in lightly salted water in another pot for 6 to 7 minutes.
- Preheat oven to 180 C / Gas 4. Generously butter a gratin dish or baking dish.
- Layer potatoes and cauliflower alternating them and season each layer well with oregano, nutmeg, salt and pepper.
- In a bowl stir cream and egg and pour over veg. Scatter grated cheese on top and bake in the preheated oven till bubbly, about 20 minutes.
