Cauliflower potato bake

    This is an easy recipe but make sure to season every layer well otherwise it turns out bland.

    Ingredients
    Serves: 4 

    • 1 large head cauliflower
    • 750g potatoes
    • 1 knob butter
    • 2 eggs
    • 200ml double cream
    • dried crumbled oregano
    • ground nutmeg
    • salt and pepper
    • 100g grated cheese

    Method

    1. Peel potatoes, cut into thick slides and boil in a pot of salted water till soft but not falling apart, about 15 minutes.
    2. In the meantime break up the cauliflower into florets and boil in lightly salted water in another pot for 6 to 7 minutes.
    3. Preheat oven to 180 C / Gas 4. Generously butter a gratin dish or baking dish.
    4. Layer potatoes and cauliflower alternating them and season each layer well with oregano, nutmeg, salt and pepper.
    5. In a bowl stir cream and egg and pour over veg. Scatter grated cheese on top and bake in the preheated oven till bubbly, about 20 minutes.
