    This easy creamy pasta bake with fresh tomatoes and lots of cheese is quick to prep and will delight your entire family.

    Serves: 6 

    • 450g penne pasta
    • 4 tablespoons olive oil, divided
    • 3 cloves garlic, minced
    • 4 ripe tomatoes, chopped
    • 200g grated mozzarella cheese, divided
    • 240ml cream
    • 175g tomato puree
    • 120g soured cream
    • 1 ripe tomato, sliced
    • 1 tablespoon dried Italian herbs, or to taste
    • salt and freshly ground pepper to taste
    • 40g grated Parmesan cheese

    1. Bring a large pot of lightly salted water to the boil. Add penne pasta and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
    2. Preheat oven to 200 C / Gas 6. Lightly grease a large baking dish.
    3. Heat 1 tablespoon olive oil in a pan over medium heat and cook garlic until fragrant, about 1 minute.
    4. Combine chopped tomatoes, 3/4 of the mozzarella cheese, cream, tomato puree, soured cream, remaining 3 tablespoons olive oil and cooked garlic in a large bowl; season with Italian herbs, salt and pepper. Mix in penne pasta and spoon into the prepared baking dish. Cover with sliced tomatoes and sprinkle with remaining mozzarella cheese and grated Parmesan cheese.
    5. Bake in the preheated oven until cheese is melted, about 30 minutes.


    You can also use a handful of fresh herbs like basil and oregano instead of the dried Italian seasoning.

    Parmesan cheese:

    Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
