Marinated feta cheese

    Marinated feta is a great addition to any antipasti platter or serve it with crusty bread as a party nibble. It also makes a lovely food gift.

    Serves: 6 

    • 450g feta cheese, cubed
    • 1 small chilli pepper, left whole
    • 1 tablespoon herbes de Provence
    • lemon zest, to taste
    • 250ml olive oil, or as needed

    Prep:10min  ›  Extra time:3days marinating  ›  Ready in:3days10min 

    1. Place feta cheese in a glass jar. Add chilli pepper, herbes de Provence and lemon zest. Fill jar with olive oil so feta is completely covered and seal.
    2. Marinate in a cool, dark place (but not in the fridge) for 3 to 4 days. Remove chilli pepper before serving.

    Excellent and that is coming from a non feta lover! This recipe tames the strong flavor I do not care for. The block of feta had a much better texture than the crumbled I typically buy too. The only negative thing I have to say about this recipe is the chile pepper. Unless you make a slit in it or slice it in half, the flavor will never come through.
