Buttermilk traybake cake with fruit

    This is a very versatile quick cake that you can make with many different fresh or frozen fruit - berries, stone fruit, apples etc.

    Serves: 20 

    • 3 eggs
    • 300g caster sugar
    • 350g plain flour
    • 2 teaspoons vanilla sugar
    • 4 teaspoons baking powder
    • 300ml buttermilk
    • approx. 500g fruit to cover the tray, as needed

    1. Preheat your oven to 175 C / Gas 3-4.
    2. Beat eggs with sugar and vanilla sugar. Sift flour and baking powder and add to the eggs alternating with the buttermilk.
    3. Line the baking tray with greaseproof paper and evenly spread with the mixture.
    4. Bake in the preheated oven till golden on top, about 30 to 35 minutes.
    5. Let cake cook on a wire rack. Serve with whipped cream.
