Brunsli (Swiss almond chocolate biscuits)

    Brunsli (Basler Brunsli) are popular Christmas biscuits from Switzerland.

    Makes: 2 Bleche

    • 250g caster sugar
    • 250g ground almonds
    • 1 generous pinch ground cinnamon
    • 2 tablespoons plain flour
    • 2 egg whites
    • 100g dark chocolate, melted and cooled to room temperature
    • caster sugar or ground almonds for rolling

    1. Preheat your oven to 140-150 C / Gas 1-2. Line a baking tray with greaseproof paper.
    2. In a bowl stir almonds, cinnamon and flour. Beat egg whites till stiff and fold them into the mix. At the end fold in the melted chocolate.
    3. Sprinkle your work surface with sugar or ground almonds. Roll out mixture about 1cm thick and cut out biscuits in the shape of your choice. Place on the prepared baking tray.
    4. Bake in the preheated oven for 30 minutes.
