Serves: 8
1 Handvoll fresh sage leaves, young and tender if possible
115g butter, at room temperature
grated zest of 1 lemon
salt
1/4 teaspoon freshly ground black pepper

Process all ingredients in the food processor till smooth. Fill in an airtight container and stop in the fridge. Alternative, fill in an ice cube tray and freeze in small portions that you can take out as needed.
