Banana and walnut bread

    If you wonder what to do with ripe bananas, here is a recipe where the riper the bananas, the better the taste.

    Serves: 12 

    • 250g plain flour
    • 1 teaspoon baking powder
    • 2 pinches salt
    • 120g butter, softened
    • 110g light brown soft sugar
    • 2 eggs
    • 500g ripe bananas, mashed
    • 100g coarsely chopped walnuts (optional)

    1. Preheat your oven to 175 C / Gas 3-4.
    2. Grease a loaf tin and dust with flour.
    3. In a bowl sift flour, baking powder and salt.
    4. In another bowl beat butter and sugar till creamy. Add eggs and bananas and beat with an electric mixer till fluffy.
    5. Reduce mixer speed to medium and slowly stir in the flour mixture till well combined and smoth.
    6. Tip into the prepared loaf tin and bake for 1 hour. Test doneness by inserting a toothpick in the centre. If it's not clean, bake for a few more minutes.
    7. Remove cake from oven and let cool slightly in tin, then unmould onto wire rack and let cool completely.
