Meatloaf with celery

    The special ingredient in my meatloaf recipe is minced celery

    Ingredients
    Serves: 4 

    • 500g mince (a mix of pork and beef mince)
    • 2 stalks celery, minced
    • 1 egg
    • 1 onion, minced
    • 2 garlic cloves, pushed through the garlic press
    • 1/2 teaspoon curry powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
    • 6 leaves fresh basil, minced

    Method

    1. Preheat your oven to 180 C / Gas 4.
    2. Mix all ingredients in a large bowl till well combined.
    3. Shape into a loaf and place in a baking or gratin dish.
    4. Bake in the preheated oven in the centre rack of your oven for 60 to 75 minutes, depending how high/thick the meatloaf is.
