Buttermilk wholemeal pancakes

    I only had wholemeal flour left but I decided to make pancakes anyway. They tasted great so I make them with wholemeal flour all the time now!

    Serves: 6 

    • 125g wholemeal flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 250ml buttermilk
    • 2 tablespoons caster sugar
    • 2 tablespoons oil
    • 1 egg

    1. Combine the flour, baking powder, bicarbonate of soda and salt in a bowl; set bowl aside.
    2. In a separate bowl combine the buttermilk, sugar, oil and egg. With a spatula, mix the wet ingredients into the dry ingredients. Let pancake batter rest for about 30 minutes.
    3. Heat oil in a heavy-based pan over medium heat. Pour about 3 tablespoons of batter into the pan and fry until the batter begins to bubble (about 1 1/2 minutes). Turn pancakes and cook on the second side until it golden brown. Repeat with remaining pancake batter.
