Mushroom strogranoff

    You can make this stroganoff with veal, pork or beef, depending on your mood. It always tastes good!

    Serves: 4 

    • 1 (250g) punnet chestnut mushrooms, thinly sliced
    • 50g butter
    • 500g fillet steak (veal, pork or beef), cut into strips
    • 1 onion, minced
    • 2 tablespoons plain flour
    • 125ml white wine
    • 250ml meat stock
    • 125ml double cream
    • salt and pepper

    1. Melt half of the butter in a frying pan and fry mushrooms till they have released their liquid and most of it has evaporated. Remove from the pan and keep warm.
    2. Melt remaining butter in the pan and fry onion over medium heat.
    3. Add meat and fry till browned and the meat juice has evaporated, stirring often.
    4. Dust with flour and stir well. Add wine, meat stock and cream and bring to the boil. Reduce heat and simmer for 5 minutes. Return mushrooms to pan and reheat. Season with salt and pepper.
