Flourless poppy seed cake

    This poppy seed cake is gluten free. Poppy seeds turn rancid quickly so it's best to grind them just before using. I grind them in the electric coffee grinder that I also use for spices.

    Makes: 1 cake

    • (gluten free) bread crumbs
    • 200g butter or margarine, softened
    • 180g caster sugar
    • 6 eggs
    • 250g poppy seeds, freshly ground
    • icing sugar

    1. Preheat your oven to 180 C / 160 C fan / Gas 4. Grease a springform tin of 24 or 26 cm diameter and sprinkle with bread crumbs.
    2. Beat butter and sugar in a bowl. Separate eggs and add egg yolks one by one, stirring about 30 seconds after each addition. Stir in the poppy seeds.
    3. Beat eggs yolks till stiff and fold into the mixture. Tip into the prepared tin and even out the top with a spatula.
    4. Bake in the preheated oven for 30 minutes.
    5. Unmould onto a wire rack and let cool. Dust cake with icing sugar.
