German potato salad without bacon

    German potato salad tastes great even without bacon. The important thing is to mix it with the vinegar dressing while the potatoes are still warm so they can fully absorb the dressing.

    Serves: 2 

    • 375g salad potatoes
    • 120ml meat stock
    • white vinegar
    • 1 tablespoon vegetable oil
    • 1 bunch chives, minced
    • 1 large onion, minced
    • 1 pinch salt
    • pepper

    1. Cook potatoes without peeling them in boiling water. Peel them as soon as they are cold enough to handle. Slice and add to a bowl.
    2. In a small bowl add stock and vinegar to taste. Add oil and stir till smooth. Pour over potatoes while still warm. Add chives and onion and toss gently. Season to taste with salt and pepper.
