Butter cut-out biscuits

    These biscuits are ideal for baking with children. They are easy and you can flavour and decorate them in many different ways: for Halloween or Christmas, birthdays, Easter or any other celebration.

    Makes: 30 to 40 biscuits

    • 125g butter, softened
    • 120g caster sugar
    • 2 teaspoons vanilla sugar
    • 1 egg
    • 250g plain flour
    • 1 teaspoon baking powder
    • ground spices or finely minced lemon or orange zest
    • icing and decoration to taste

    1. In a bowl beat butter with sugar and vanilla sugar till creamy. Stir in egg.
    2. In a bowl mix flour and baking powder and gradually add to butter mixture. Swiftly knead mixture till it holds together. Wrap in cling film and refrigerate for at least 1 hour. The mixture is easier to roll out when firm.
    3. Preheat oven to 175 C . Gas 4. Line a baking tray with greaseproof paper or a silicone baking mat.
    4. On a lightly floured surface thinly roll out mixture and cut out biscuits in your favourite shapes.
    5. Bake in the preheated oven till lightly coloured, 8 to 10 minutes. Transfer biscuits to a wire rack using a spatula, they break easily whilst still warm. Let cool completely before decorating.
