Pasta bake with ricotta and pesto

    A pasta bake with only 4 ingredients. Make a green salad to go with it and your dinner is ready.

    Serves: 4 

    • 500g small noodles
    • 500g ricotta
    • 1 (190g) jar green pesto
    • mozzarella for sprinkling

    1. Preheat oven to 180 C / Gas 4.
    2. Cook pasta in plenty of salted water till al dente. Drain.
    3. In a bowl stir ricotta with pesto and mit Pesto and pasta. Tip into a buttered gratin dish and sprinkle with mozzarella. Cover with aluminium foil.
    4. Bake in the preheated oven fo 20 minutes, then remove foil and bake till the cheese is bubbly, a further 10 minutes.
