Creamy bacon and potato salad

About this recipe:
A rich and creamy potato salad with bacon to add a smoky flavour to the dish. A nice addition to any buffet table to accompany a summer BBQ.
2kg potatoes, peeled and chopped
6 rashers smoked bacon
300ml full fat mayo
2 tablespoons chopped parlsey
sprinkle of salt and pepper
- Boil potatoes in unsalted water until tender. Drain from hot water and place in cold water to cool.
- Grill bacon until crispy then chop into small pieces (easier to cut up after it's cooked otherwise small pieces will burn if you're not careful).
- When potatoes and bacon have cooled, place into large serving bowl and stir mayo, parsley, salt and pepper through gently. Place in the fridge till serving.
You can use reduced fat mayo but it does taste better with the full fat version - makes it much creamier. Forget the calories for today!
Nothing fancy here, just good, old-fashioned, homemade potato salad. I had a few chopped onions and a hard-boiled egg in the fridge, so I added them, as well.

I think this sounds yummy...and I agree with you about the calories but I thought salads were supposed to be healthy? Who cares lol, I'm going to be making this!
